Tira Misu and Chocolate Ganache
TIRA MISU
4 each egg yolks
1/2 Cup sugar
Strong Coffee to taste
1/4 oz. Vanilla
8 oz. Marscapone Cheese
1/2 cup Coffee/simple syrup mixture
In a mixing bowl add the egg yolks and sugar. Using the whip, mix to a thickened consistency. Add the Marscapone cheese and coffee and continue to mix.
Whip one quart of whipping cream.
Using a sharp knife, cut the tips off the lady fingers and line a cake pan or springform pan with the lady fingers, cut tips down. Fill the bottom of the pan with lady fingers also. Fill in any holes or gaps on the bottom with the tips that were cut off. Soak the lady fingers with the coffee/simple syrup mixture. Fold the egg/sugar/coffee mixture into the whipped cream. Layer the whipped cream mixture alternating with the coffee soaked lady fingers finishing with the whipped cream mixture. Place in the refrigerator to chill. Top the Tira Misu with powdered cocoa.
CHOCOLATE GANACHE
8 oz. Whipping Cream
1 oz. Vanilla Extract
12 oz. Bittersweet Dark Chocolate
4 oz. Milk
Place the cream in a sauce pan and bring to a boil. Add the vanilla and the chocolate. Reduce the heat and simmer until all the chocolate is melted and mixed, stirring constantly.
