COOKING WITH STAX’S
Tempura Batter and Oriental Dipping Sauce

1 Cup All purpose flour
¼ Cup Cornstarch
1 Cup Water – ice cold
1 Each Egg
Stax’s seasoning, to taste
White wine, as desired
Mix all the above ingredients and whisk until smooth. *HINT: Water must be ice cold for best results.
Dip your product (shrimp, scallop, fish, vegetable, etc.) in the batter and fry in canola oil heated to 375o.
Oriental Dipping Sauce
Honey
Soy sauce
White wine or Sake
Scallions, finely diced
Fresh ginger, Finely chopped
Fresh garlic, peeled and minced
Lime juice
Whisk all the ingredients together and allow to sit overnight.
