TRADITIONAL GREEK SALAD

2 oz. Mesclun mixed greens
1/4 head Iceberg lettuce
1/4 head Romaine lettuce
4 Artichoke hearts
1 Cucumber, peeled and diced
2 Tomatoes, diced
1 Red onion, julienned
12 Pepperoncini peppers
12 Kalamata Olives
6 Anchovies
6 oz. Feta cheese
1 tsp. Dried or fresh oregano
8 scallions, diced
Parsley, chopped for garnish
6 oz. Greek dressing

Toss the mixed greens with the Greek Dressing. Add half the tomatoes, cucumbers, artichokes, olives, scallions, parsley and Feta Cheese. Toss these ingredients. Place the mixture on a plate and garnish with sliced red onions, pepperoncini, tomatoes, cucumbers, artichokes and top with Feta Cheese. Place the anchovies on top of the salad and sprinkle with oregano and parsley.
