4 oz. Extra Virgin Olive Oil
4 oz. Robert Mondavi Chardonnay
1/2 Bunch Fresh Parsley, Chopped
1 tsp. Oregano, dried
2 Cloves Garlic, peeled and minced
1 oz. Lemon Juice
6 each Roma Tomatoes, diced and seeded
2 Shallots, peeled and minced
1 bunch Scallions
2 oz. Parslied butter, whole butter cubed
12 U-12 Shrimp, peeled and deveined
6 oz. Feta cheese
In a hot sauté pan add the olive oil. Heat until you can see a hint of smoke. Add the
shrimp and sauté until halfway done. Add the shallots, tomatoes, oregano, garlic and Stax
Seasoning. Add the whole butter. Deglace the pan with the wine. Add the scallions and turn
down the heat. Add the feta cheese and lemon juice. Stir and serve immediately.
