PEPPERMILL SICILIAN SHRIMP SCAMPI

1 Lb. Shrimp (peeled and deveined)
1 Cup Buttermilk
3 Eggs
1 oz. Peeled minced garlic
4 oz. Flour
Stax Season to taste
3 oz. White wine
2 Lemons

Combine eggs and buttermilk and whisk. Coat shrimp in flour and in egg wash. Then coat again in flour. Shake off excess flour and place shrimp in 350 degree oil and fry until shrimp are cooked halfway and remove from oil. Drain on paper towel. In separate hot pan add 4-oz. Clarified butter. Add garlic, wine, lemon juice and return to high heat. Next add shrimp and sauté until cooked throughout. Serve immediately.
