Hot Spinach Salad
3 oz. Bacon/Pancetta
1 oz. Brown sugar
3 oz. Olive Oil
1 oz. Balsamic Vinegar
1 tsp. Lemon Juice
½ tsp. Chopped Garlic
dash Worcestershire Sauce
pinch Stax Seasoning
2 oz. Sliced Mushrooms
5 oz. Fresh Spinach
3 oz. Walnuts
3 oz. Roquefort Cheese
1 oz. Leeks (julienned white parts only)
Saute bacon over medium heat and remove from pan and reserve.
Add brown sugar to bacon fat, stir.Add walnuts and garlic, stir
Add vinegar, lemon juice to pan and return to high heat Saute mushrooms,
add worcestershire. Drizzle olive oil Stax Seasoning to taste Fry leeks, let
drain on paper towel Toss spinach and dressing. Top with cheese and fried leeks.
