CRAWFISH BISQUE
1 lb. Crawfish tails
1 oz. Minced shallots
2 Tbsp. Diced Scallions
1 Tbsp. Diced garlic
2 oz. White wine
Dash Worcestershire sauce
Dash Tabasco sauce
1 Tsp. Thyme leaves, chopped
3 oz. Sherry
1 Tsp. Paprika
4 oz. Chicken Stock
2 oz. Tomato paste
2 each Bay leaves
1 oz. Parmesan Cheese
1 Cup heavy whipping cream
2 oz. Butter, cubed
Stax Seasoning to taste
Chopped parsley for garnish
In a hot pan, sauté shallots, scallions and garlic for one minute. Deglaze the pan with
white wine; add Worcestershire Sauce, Tabasco Sauce and thyme and sauté. Deglaze with
Sherry; add paprika and chicken stock. Stir in tomato paste, add bay leaves and simmer for
ten minutes. Whisk in heavy whipping cream and then the whole butter. Serve immediately.
