Instructions for Roasting Peppers

 

To roast whole peppers, using a gas range, place the whole washed pepper directly on the burner over the flame until the outside skin is charred. If using an electric oven, place the whole peppers on a baking sheet and bake at 400 degrees. Continually turn the peppers in the flame until the entire outside skin is burnt. As soon as the peppers are done, place in a solid container and cover with plastic wrap to "sweat the skin off." After the peppers have cooled, remove and place on a cutting board. Cut the stem off and remove the core. Cut the remaining pepper into quarters and flatten, skin side up. Using a sharp knife, scrape the charred skin off of the pepper.
